Excellent, poised, balanced with low dose, a build in complexity from time on lees, citrus, great length, a fine bead. Long, vertical and delicious. Richness from time giving it great mid-palate depth. A superb example of a Blanc de Blanc.
There are perhaps two key factors in making great sparkling. The first: great fruit that suits the desired style. Tassie has that covered. The second: time. Great sparkling really does require patience. Pre-tirage aging of base wines, time in bottle on lees, and time post disgorgement to settle. For some style incorporating reserve wines, the time taken to age those wines to ensure they add to the blend.
The 2017 sees us 9 years down the track with over 12 months on cork. It’s delicious now and will be delicious for many years to come.

This 2017 Blanc de Blancs is a single-vineyard bottling from the oldest Chardonnay vines on the property. There is a small component of oak used for fermentation and maturation in the base wine, between 10% and 20%. This bottle was disgorged in the winter of 2025, and the intention is for this wine to be held under cork for a while yet, perhaps the spring of 2026 for release. This is only the fourth time this wine has been produced, the first in 2014. The fruit here underwent full malolactic fermentation, and the conditions of the vineyard fully allow for this to complex the wine, rather than dominate it. So, on the nose, the wine is toasty and laden with lemon curd and chalk, an attractive hint of curry leaf and brine. In the mouth, the wine is rich and toasty, and its eight years on the lees have imbued it with tension, freshness and a creamy texture. The length of flavor is excellent. It had five grams per liter dosage, as less is required due to the warmth of the site here. 12.5% alcohol, sealed under cork.

Stefano Lubiana wines was established by Steve and Monique Lubiana in 1990. A proud fifth and sixth generation winegrowing family, Steve was inspired by his family’s background in wine to pursue his own winemaking; his father Mario grew vines and made wine in Souther Australia, and their ancestors in Italy before that.
Leaving the sultry climes of South Australia, Steve and Monique moved to Tasmania in search of a cool-climate region where they could grow and make premium wines, with a particular focuse on Pinot Noir and Chardonnay. 30 years on, their Stefano Lubiana label has earned a reputation for expressive, high-quality wines cultivated from biodynamically grown vines on their Derwent River estate.
In the video below, Steve speaks to his personal passion for winegrowing and his inspirations and aspirations for the growing family estate.
Stefano Luibana are Tasmania’s first and only certified biodynamic vineyard. Steve and Monique first took the decision to use biodynamic methods in 2010.

“This means that our wines are free of all synthetic treatments, additives and pesticides. Instead we travel the alternative path, stepping back in time and using cosmic rhythms to ensure soil regenereation as well as effective vine care through all phases of the year’s seasonal cycles.
These methods enhance our attention to detail in the vineyard and winery, as we’re more alert to the signals of Mother Nature and her messengers. Every season, we’re becoming more attuned to the synergies between our varied soil types, their organisms, the local flora and fauna, and of course our vines.”
Steve & Monique Lubiana
As in the vineyard, the focus in the Stefano Lubiana winery is on traditional and environmentally sensitive practices. Their winemaking approach can be described as minimal intervention, with innovative use of barrels, whole-bunch fermentation and wild yeasts used to hand craft a distinctive range of wines.

“With most of our 25ha estate planted to the two great Burgundian varieties of Pinot Noir and Chardonnay, it’s no secret that with meticulous vineyard craftsmanship and sympathetic and thoughtful winemaking, our wines have earned a reputation as some of most revered and desirable in Australia.
Indeed, the fact that our Pinot Noirs have won Best Biodynamic Wine in the World at the prestigious London International Wine Challenge on three separate occasions is testament to the special site of which we’re the lucky caretakers, and the expressions of purity that we’re able to offer from Tasmania to family tables around the world.”
