The unique yeast that grows on top of the sherry protecting it from oxidation.

A Spanish sherry style. Fino is made from the grape variety Palomino Fino, it is protected by Flor yeast throughout its life. In what is called biological maturation.

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

I thought Bouland, Thivin & Foillard were good! Note on the 2019: Yes! This is superb. Right out of the gate I'm blown away. Taken far too long to get these on the list. An exceptional élévage has brought this wine to a place of great harmony, poise, and balance. Not the gangly teenager you see in many a young Beaujolais. This is a complete wine with impressive finesse over an underlying power. Dark cherry and spice, licorice and blood orange. Impressive depth and length, yet a sense of weight

The most mineral of the 1er's The funk. Is there again. The cut is there, the step up in acid with the more linear elegant fruit and power over the top. There is something here that gives me a feel of Brézé / Savennieres Chenin from the Loire Valley. A little quince thing happening, baking spice, super chalking acid and a little phenolics offering cleansing texture. For all the many great things that can be told about Giacosa’s red wines, it is the Arneis that maybe typifies the great qualities of Bruno Giacosa the man.
