The unique yeast that grows on top of the sherry protecting it from oxidation. When aged under flor, a wine is considered to be undergoing biological maturation. The flor yeast consuming oxygen, alcohol, and, volatile acidity, in turn the produce metabolites that add unique characters and textures to the wine. Each Bodega has a unique endemic flor, that as Jesús from Equipo Navazos would say, is one of the two sherry terroirs, the other the vineyard.

Nervi-Conterno Gattinara ‘Molsino’ 2019

Nebbiolo | Italy, Alto Piemonte

The 2019 Gattinara Molsino is a dark, brooding wine. Smoke, incense, licorice and leather open in the glass, but only with great reluctance. A wine of tremendous persistence and presence, the Molsino is so impressive in 2019. It is also embryonic and in need of cellaring. The only question is how long. Time in the glass brings out the wine's natural resonance, offering a glimpse of what will come in time. Drink 2029-2049 Antonio Galloni, Vinous 97 Points

Swinney Riesling 2022

Riesling | West Australia, Australia

Riesling and the Great Southern region of WA are a great match. Swinney's covers all of the gaps I find in so many Australian Rieslings. The two big ones: development and vinosity, and texture. Precise with an exceptional line of acid giving it the tension to hold exceptional fruit. A twist of phenolics adding interest and a cleansing finsh. Great gear! The 2022 Riesling was bottled June 2022, and at the time of tasting (August 2022), it had spent only two months in glass. It is piercing

A cuvée that now sees two winters in barrel like the rest of the range, the 2020 Bourgogne Côte d’Or Rouge exhibits aromas of sweet berries, spices and vanilla pod, followed by a medium to full-bodied, ample and seamless palate that’s flesh and charming, with sweet tannins and succulent acids.
