The unique yeast that grows on top of the sherry protecting it from oxidation. When aged under flor, a wine is considered to be undergoing biological maturation. The flor yeast consuming oxygen, alcohol, and, volatile acidity, in turn the produce metabolites that add unique characters and textures to the wine. Each Bodega has a unique endemic flor, that as Jesús from Equipo Navazos would say, is one of the two sherry terroirs, the other the vineyard.

Feeling Thirsty?

A fresher mix is comprised by notes of both red and black cherry, dark raspberry, earth and a violet top note. There is fine volume and intensity to the bigger-bodied flavors that flash good minerality on the firm, powerful and focused finale. The 2021 Chablis Les Preuses Grand Cru has a well-defined bouquet and perhaps is the most complete of the Grand Crus from the Domaine. The palate is well balanced with a touch more substance than Les Clos, fine acidity, quite taut and harmonious with good grip and energy on the finish. I can see this ageing nicely in bottle. The 2019 Barolo opens to a lean appearance with a very vibrant Nebbiolo color that shines with dark ruby highlights. There is dried cherry and candied fruit aromas on the bouquet.
