Riddling

Riddling or Remuage in French is the process of moving all of the dead yeast in a bottle fermented sparkling wine from the side of the bottle into the very neck of the bottle so it can then be removed through the process of disgorging.

After a bottle fermented sparkling wine has finished its fermentation and been aged for the desired time in contact with the yeast lees, dead yeast cells, the wine must be clarified prior to disgorging addition of the liqueur d’expedition and re-sealing of the bottle with a cork. Riddling or Remuage in French is the process of moving all of the dead yeast in a bottle fermented sparkling wine from the side of the bottle into the very neck of the bottle so it can then be removed through the process of disgorging.

There are two ways to riddle:

  1. Manual riddling.
  2. Machine riddling using Gyropallets.

The images below, courtesy of Pol Roger, show manual riddling in action. From left to right. 1. A bottle ready to be riddled, you can see the yeast on the side of the bottle. The bottle is ‘Sur Lie’ on yeast lees. 2. A riddler at work, he’ll turn 30,000 bottles a day 1/4 turn for 30 days, slowly lifting the bottles to a vertical position upside down. 3. The end result: all of the yeast lees are in the very neck of the bottle ready to be removed in the process of disgorging. The bottle is now ‘Sur Point’ on point. The whole process takes about a month.

The video below shows manual riddling in action.

Mechanical Gyropallets, by contrast, hold massive cages of fizz and rotate them more frequently. They are capable of riddling a bottle in 7-10 days.

Nebbiolo from Inferno, Valtellina

Ar.Pe.Pe Valtellina Superiore Inferno Fiamme Antiche 2022

The 2022 Valtellina Superiore Inferno Fiamme Antiche is bright and nicely sculpted. Orange peel, mint and white pepper give this vibrant Valtellina Superiore tons of sizzle. Red Blend from Gaiole UGA, Chianti Classico

San Giusto a Rentennano Chianti Classico 2023

The 2023 Chianti Classico is terrific. In fact, it is one of the most complete wines of the year. Dark cherry fruit, leather, cedar, menthol and lavender all take shape in the glass. The 2023 is dense but not heavy. Even so, I would give it a few years to shed some baby fat. It's an impeccable wine in a challenging year.Antonio Galloni, Vinous 92 PointsSplash it in the decanter, grab a Bistecca Fiorentina & enjoy!

Pinot Noir from Volnay, Côte du Beaune

Domaine Louis Boillot Pommard 1er Cru ‘Croix Noires’ 2022

“This is perhaps even cooler and more restrained with its layered array of various dark berries, plum, freshly turned earth and a whiff of violet. The mid-palate mouthfeel of the middleweight plus flavors is quite refined yet this contrasts substantially with the moderately rustic, dusty, austere and serious finale. This very powerful and compact effort is expressly built-to-age and is one that is definitely going to need it, indeed I would be surprised if it is approachable before 10 years ha

Giovanni Sordo Barolo 'Perno' 2013
The Bold!

Nebbiolo from Monforte d'Alba, Barolo

Giovanni Sordo Barolo ‘Perno’ 2013

Bigger than most other wines, with more grunt in all respects. Complex. Chewy and very full palate with a wall of tannins. Meaty flavours with some ironstone. Old-school. Peter Godden, Neb Guru This is all Monforte, with giveaway blue fruits, violet, cherry liqueur and some mint. Firm, taut and fleshy, this is typical of this part of Perno, the Cerretta parcel, immediately adjoining Conterno-Fantino’s, with which it shares a similar darker ‘blue’ style. Tannins seem very ripe this year
