It’s funny looking at this a couple of years later, having gone on to make the 2017 Wine Decoded Shiraz. All of the options we discussed in the video around foot stomping, destemming the pot, we didn’t do and it was the right choice. Looking at the wines from both 2016 & 2017.

This just reinforces how long it takes to get your head around fruit from a vineyard. Each vintage is so different. Seeing the robust tannins from 2016 we went, even more gently in 2017 yet it was a very different year.

Given enough fruit, there are a number over other fermentation management techniques we’ll try in the future as we continue to push to make even better wines at Wine Decoded HQ!

Welcome to winemaking! You get one go at it every year and for the next decade the fruit comes in looking completely different each harvest and you just jump in the arena and go for it!
