Trying this in June 2021, it’s in a wonderful place. I like the descriptor of stewed granny smith apples, with citrus pith and, crème pâtissière. Fresh with a line of chalky acid, it’s developed wonderfully to reveal toasty honeyed layers, blocking the malolactic fermentation has given it plenty of zip. The 3 gram dosage, a softening, sweetening effect of time in bottle bringing it into balance. A fine layer of phenolic grip makes for textural intrigue. Like all proper Champagne, the core of fruit is there, long and lingering, let a glass go flat and you’ll see it in full form. You’ll see it freshen in glass too. It sounds counter intuitive, that’s vino for you! There’s a lot going on, a little time in the glass sees it harmonise and layer up. Loads of fun to be had here!
