Blend from Mareuil-sur-Aÿ, Vallée de la Marne
Notes on the 2012:This is superb. So fine and delicious. Such harmony is not common, the Pinot and Chardonnay are playing together beautifully. It has just the right level of oxidative vinosity, so well supported by a core of fruit that has great length and depth. I keep coming back the the harmony, layers of complexity and balance. Will the Pinot seems to be the dominant, as would be expected in the front and mid-palate, the line and length from the Chardonnay and the mineral nature to this
Chardonnay from Aÿ, Vallée de la Marne
A divine, powerful, Blanc de Blanc from Aÿ, typically a Pinot village. Superb poise, incredible mouthfeel, long and fine. Incredible complexity, this builds in a big glass revealing layer after layer of fruit, patisserie notes, lightly toasted almond, and gentle, refined oxidative hints. This is benchmark gear. It's hard to believe it's only 12% alcohol such is the depth and length of flavour. The Méthod Fabrice Pouillon & 5 years on lees offers us up a seamless wine with wonderful shape,
Chardonnay from Aÿ, Vallée de la Marne
Valnon makes a stunning Blanc de Blanc. Unusual to see Chardonnay grown on a Grand Cru site in Aÿ, a village known for its Pinot Noir. Great power, the incredible intensity of fruit is a clear sign of just how good the vineyard and winemaking are. As with all of Frabrice's wines the mouthfeel and harmony are exceptional. A profound statement in a glass.

Often in the 'Pro' wine circles, you're asked to nail your banner to a mast in a blind tasting. Although a Chardonnay, Fabrice has fooled, without malice, many a Champenois, who has called this wine a Pinot. It's not so much the flavours, but, the body, richness, and, mid-palate power that this wine offers that can confuse. In the end, all of this is irrelevant. What you have in front of you is a wine of purity, line, length, excellent acid, with lovely ripe flavours, a little pith and grapef

Such a beautiful Rosé. If finding a good wine is hard, finding tasty Rosé Champagne is a true mission. There are so many tricked up hard angular wines. Fabrice has got it all going on here. Rosé made by allowing fruit skin contact rather than dosing a white wine with some Red really does appear to offer a much more refined result. This one has lovely fresh, yet developed, red fruits, a little savoury edge and so much more going on. The halmark Pouillon harmony and energy. Just that very sligh
Blend from Aÿ, Vallée de la Marne
Excellent development, the time on lees shows. Generous and developed with super zippy acid, delicious drinking now. Pinot shining with chardonnay linearity and chalkiness adding backbone. Super creamy lees action. A powerful core of fruit yet with a restraint. Chalky and saline. Layered and complex. This is very good. Gentle aldehyde offering nuttiness and intrigue.“The 2014 Extra-Brut Ay Grand Cru bristles with tension. It’s a great choice for readers who enjoy focused Champagnes.

“This is our foundation-wine as so many things started with this parcel. First of all, because it’s one of Champagne’s oldest massal selections. Afterwards and most especially because it gave me the idea for my Méthode Fabrice Pouillon used to make all my wines.”
Blend from Côte des Blancs, Champagne
Categorically the finest Extra Brut ever conceived, this is a cuvee of laser line and immortal structure that rejoices in the lightning energy of 2008 and the exacting precision engineering that is Billecart. A glowing, medium straw hue is a dazzling prelude to its scintillating purity and drive, cut with magnificent acid line and high-tensile chalk structure. The distinguished, north-east facing slopes of Verzy and Verzenay take a delightfully fragrant and pure lead, presenting white cherry and
