Description

Delicious Chambolle, it looks more like a 1er Cru than a village! Still tightly coiled. A striking backbone of vibrant red and darker fruits, supported by lovely fine tannins and just the faintest layer of oak. As it openned, a perfume of violets and much more lifts from the glass. There’s a little savouriness and a little spice adding complexity. Very much speaks of Chambolle with the line and length of tannin. This will be smoking in 5-10 years.

Why is this Wine so Yummy?

Substantially from 40-50+ yo vines planted just beneath 1er cru vineyards in the lieu dits of Les Échanges and Les Athets, with a small proportion from the adjoining Les Chardannes and Les Herbues. Deep rich and intense a remarkably generous village wine that punches well above its weight for both character and intensity.

About Domaine Collotte

It was back in 1981 that a young 16 year-old Philippe Collotte took over the family vineyards and bottled the first wine under the name of Domaine Collotte. He subsequently purchased some mature vineyards of about 40 years of age in both Gevrey Chambertin and Chambolle-Musigny, to add further to the domaine’s repertoire.

In 2013 Philippe was joined by his daughter Isabelle, who studied viticulture and oenology at the Lycée Viticole de Beaune and followed that with further studies in Wine Business. Whilst Isabelle focusses particularly on the production of the Domain’s white wines, there is no doubt that her addition to the team has taken the wine quality to another level across the board. Today Domaine Collotte farms 17ha of vines (16ha currently in production) in Marsannay, Fixin, Gevrey-Chambertin and Chambolle-Musigny.

Winemaking

The winemaking approach for all the top reds is the same. All fruit is hand-picked and 100% de-stemmed followed by a one-week cold-soak at 10°C, gradually warming to a natural ferment over a couple of weeks. Extraction is via pigeage (plunging) to begin with then moves to lighter remontage (pump-overs) at about the half way stage. All the wines are matured in 25% new oak barriques for 12 months and bottled without filtration. Collotte uses a single cooperage and barrel specification aimed at better distinguishing the different terroirs. All barrels are Tonnellerie Rousseau Allegro barriques.
