From a huge 3.5 ha holding that is composed by <75% Vaillons proper with the remainder from Roncières, Mélinots and Châtains.


The 2019 Chablis 1er Cru Vaillons mingles aromas of crisp yellow orchard fruit and white peach with hints of beeswax and white flowers. Medium to full-bodied, enveloping but incisive, with tangy acids and fine depth at the core, it’s long and saline.

Why is this Wine so Yummy?

Back in the early naughties, we were hoovering Chablis from the early 1970’s. When the Tsunami hit, wheelbarrows of Grand & 1er Cru’s were arriving from the auction at houses at around $14 a bottle. By the time it receded, they were up at a round $40 a bottle and still a bargain. Purity, complexity, amazing texture, lovely lines of acid were the hallmarks of these incredible wines. Testut et Fréres Grenouille featured! Such a great vineyard.

About William Fèvre

Fèvre is a major producer that boasts one of the most impressive arrays of Premier and Grand Crus. Didier Séguier has been head winemaker for several years now. Under Séguier guidance, the Domaine veered away from their rather zealous oak regime to a more prudent approach that mixes barrel ageing with stainless steel.

The domain uses old barrels with an average age of 6 years rather than new oak, in order to preserve freshness and minerality and enable the subtle nuances of Chablis’ terroirs to fully express themselves.

1959, the year in which William Fèvre declared his first crop, marked the birth of the domain. Descended from a family which had lived in the Chablis region for over 250 years, it was only natural that he set up as a winemaker with 7 hectares of vineyards.

Over the years the domain has acquired new vineyards in Chablis, all located in the historic terroirs. William Fèvre has become one of the biggest land owners in Chablis with 78 hectares of prestigious vineyards, of which 15.9 are classified as Premiers Crus and 15.2 as Grand Crus.

The 2019 Vintage at Fèvre

I left my tasting with Didier Séguier wondering if the 2019s might be the best vintage I’ve ever tasted at Domaine William Fèvre. At this address, the vintage’s low yields have translated to wines of remarkable concentration, but Séguier has also achieved levels of cut and tension that are rare in contemporary Chablis. My only reservation (if one can call it that) is that these are serious, structured wines that are tightly wound and introverted after their recent bottling, a tendency no doubt amplified by their DIAM closures; therefore, many are surely destined to be drunk too young. But readers who purchase Fèvre’s top 2019s and forget them for more than a decade are going to be richly rewarded, of that I’m confident. Aside from the quality of the 2019 vintage, the other big news here is that Fèvre is converting to organic farming, an ambitious and admirable project for this 78-hectare domaine.

A slightly riper and quite dense nose features notes of white pepper, quinine, mineral reduction and a combination of orchard fruit compote scents. There is excellent volume to the sappy and powerful flavors that, somewhat surprisingly, flirt with rusticity on the noticeably warm bitter lemon-inflected finish. Like the Beauroy, this is not a Vaillons of finesse, but it certainly cannot be faulted for a lack of frank character. 10 Nov 2020, Drink: 2024+
