Bâtonnage

Bâtonage is the process of stirring barrels, or any other vessel holding wine to re-suspend lees, consisting mostly of dead yeast. Stirring the lees impacts the texture, aroma and flavour. In addition, the process introduces oxygen as the vessel must be unsealed to insert the stirrer.

Bâtonnage is the process of stirring barrels, or any other vessel holding wine to re-suspend lees, consisting mostly of dead yeast. Stirring the lees impacts the texture, aroma and flavour. In addition, the process introduces oxygen as the vessel must be unsealed to insert the stirrer. It’s an important part of the élévage of the wine. Typically stirring will be more frequent in the early phase of ageing. Frequency will be determined by experience and tasting the wine. There is little point in stirring the wine more frequently than weekly as the lees takes a week to settle and the impact of the introduction of oxygen could be too severe.

Giovanni Sordo Barolo ‘Gabutti’ MAGNUM 2019

A wonderful expression of Serralunga, all of the tea, slate, graphite, exceptional quality tannins, with a presence and sophistication. The firm mouthfeel of seriously good Serralunga tannins. Again such a complete wine. The nose draws you in. Begging you to drink. A darkness and energy that is palpable.Impressive gear. Precise, and pure, wearing the vineyard and commune on its sleeve. Superb fruit of depth and length. Great drinking here with much much more to come.

Shiraz/Syrah from Macedon, Victoria

Dhillon by Bindi Col Mountain Shiraz 2017

This wine, to state the obvious, has been quite a while coming! In 2014 we began making experimental ferments using four clones from this exciting vineyard and decided to mature the blended bottled wines until we felt they were settled and singing. The 2017 Col Mountain is based on the smooth and aromatic Shiraz clones PT23 and 1654 with a little of the robust and rich Yalumba and R6WV28.The Col Mountain wines, from deep red soil with a significant amount of shattered rock, are earthier and
