Garrigue


Garigue or phrygana is a type of low, soft-leaved scrubland ecoregion and plant community in the Mediterranean forests, woodlands, and scrub biome. It is found on limestone soils in southern France and around the Mediterranean Basin, generally near the seacoast where the moderated Mediterranean climate provides annual summer drought.[1][2][3] The term has also found its way into haute cuisine, suggestive of the resinous flavours of a garigue shrubland. This is 70% Pinot Noir and 30% Chardonnay from 40-year-old vines in Ambonnay. The Egly family select the grapes for this wine at harvest and raise the wine completely in barrel.
