From 50 year old vines from a cool site in Eden Valley. Bone dry, textural, great depth. Fuller richer style. Turns out there’s a lot going on in the winery 15-20% of the fruit spends 100 days on skins layering in textures. 15-20% goes through malolactic fermentation softening acids and adding flavour aroma. Natural yeast, unfiltered. A portion of the wine spends time in old oak.
Use of natural yeast helps adds complexity. The wine remains unfiltered to maximise flavour and aroma.
Seriously good Riesling made with heart.
