‘The 2010 Amarone della Valpolicella Riserva Scajari lifts up with a refined display of black cherries, lavender and white smoke. With coaxing, it blossoms further, adding depths of exotic spice and purple-tinged flowers. It’s silky and pure with a savory display of pure red fruits and inner herbal tones, as cooling minerality collects toward the close. There’s wonderful symmetry here, tapering off remarkably fresh yet also with a coating of fine tannins, which should carry the Scajari for another decade or more in a cool cellar. That said, don’t come here looking for a powerful or extroverted expression of Amarone, because this is all about elegance and poise.’

In the Vineyard

Vineyard Practices: Certified organic. Earth’s natural cycles are respected (for example vines are pruned according to the moon phases). No insecticides are used. Only manure is used as fertilizer. Spontaneous cover crops (grass cover) are left between the rows of vines, the grass cover is mowed and the turf is left in place (the soil is not tilled).

In the Winery

HARVEST PERIOD Hand made at the beginning of October, the fruit is dryed naturally for 3-4 months

VINIFICATION After the soft press, the grapes are macerated at low temperature for 3-4 days, after the pre-fermentation maceration the must is let ferment with the skin for 20 days pushing down the cap and pumping over the must at least twice every day. The malolactic fermentation is spontaneous in the following summer

MATURATION The wine spent the first months in steel tanks temperature controlled, the second step is 5 years aged, part in 25 hl. French oak barrels and part in Burgundy barriques “sur lies”. At the end of the ageing process the wine is bottling without any filtration and spent 6 more months fining in bottle before release it.

Is located in Soave in the region of Veneto in the north-east of Italy. Soave lies just to the west of Verona. The vineyards for the Amarone are in Valpolicella.
