Methoxypyrazines are flavour and aroma compounds present in both Cabernet Sauvignon and Sauvignon Blanc responsible for the herbaceous, vegetal, grassy, capsicum aroma. The concentration of these flavours and aromas is reduced through exposure of the fruit to heat and sun. The riper and more exposed the fruit is the lower the concentration of methoxypyrazines.

Pinot Noir from Volnay, Côte du Beaune
A perfumed and exceptionally pretty, elegant and pure nose speaks of wafting essence of red berries, especially cherry, along with exotic spice and floral wisps. I very much like the texture of the beautifully refined middleweight flavors that exude a fine bead of minerality on the bitter pit fruit-inflected finish that displays excellent length. Pinot Noir from Vosne-Romanée, Côte-de-Nuits
This was one of the few wines in the line-up to display any appreciable reduction and in this case it's enough to mask the underlying fruit. The suave, round and highly seductive medium-bodied flavors possess a caressing texture yet there is good underlying power to the acceptably long and complex finale. This seemed slightly out of sorts though I suspect that it will better harmonize once in bottle.Allen Meadows, Burghound 90-93 Points
Pinot Noir from Gevrey-Chambertin, Côte-de-Nuits
One of the sneaky 1er Cru Gevrey's to watch out for! The 2020 Gevrey-Chambertin 1er Cru Les Cazetiers is brilliant, unwinding in the glass with aromas of dark berries, plums, dark chocolate, spices and vanilla pod. Medium to full-bodied, layered and concentrated, it's elegantly muscular, with a deep and multidimensional core and a long, expansive finish. Nebbiolo from Barbaresco, Piedmont
The 2021 Barbaresco Riserva Muncagota is laced with strong floral and savory notes. Brisk acids and beams of supporting tannin give the 2021 its driving, tense personality. I expect those qualities will be positives for the future, but today the Muncagota is pretty forbidding. Give this time. This is one of the most tense editions of this wine I can remember tasting.
