A Spanish sherry style. Amontillado – Made from Palomino Fino, the balance in of Biological vs Oxidative maturation is dominated by the oxidative side for Amontillado. The name translates to of Montilla, the slightly inland region known best for it’s Pedro Ximénez where the technique for it production of Amontillado originated.

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

Paolo Scavino Barolo ‘Prapò’ 2021

Nebbiolo | Serralunga d'Alba, Barolo

The 2021 Barolo Prapò is fabulous. It offers up an exotic mix of dark fruit, lavender, graphite, plum and scorched earth, with firm, muscular Serralunga tannins to back it all up. Readers will have to be patient with the 2021. It's a superb wine in the making, but very much a Serralunga Barolo that needs time to blossom. A blend of fruit from three MGA sites (Bricco Chiesa, Capalot and Fiasco), the Oddero 2021 Barolo reveals cassis and dried cherry, but it also shows extra spice and smoke at the back. The first time we've had Sandro Fay's wine from the Sassella sub-zone of Valtellina and it's a ripper. A step up from the Valgella appropriately reflected in the price difference. Longer and with more mid-palate depth it shows excellent flow and shape. The pure, fine acid and long sophisticated tannins make for an equally refreshing drop. Darker sour cherry fruit laced with slate, spice and lick of that alpine thing doing on. Great transparency. Loads of joy to be had with this pleasure festa!
