A Spanish sherry style. Manzanilla Pasada – Made from Palomino Fino, Manzinilla Pasada, is an older richer version of Manzanilla, the Flor begins to diminish after 6-7 years as the nutrients to sustain it a consumed, the maximum age a Manzanilla would be bottled at, and, it shifts from a phase of biological aging under flor to an oxidative aging for the remainder of maturation.

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

Claudio Mariotto ‘Cavallina’ Derthona Timorasso 2021

Timorasso | Piedmont, Colli Tortonesi

Absolutely delicious, beautiful weighting and flow, lovely acid profile & florals, refreshing just a lick of phenolics to add play to the texture. So much energy and direction. A little bit of soft green leafy herb. Spice, nicely layered lees. Harmonious. Complete. Citrus oils, lemon and much more. The fuller and richer of the two as usual.

Bindi Block Darshan Pinot Noir 2018

Pinot Noir | Victoria, Australia

It's a rare treat to have a wine or three that we hold for five plus years and are able to assess many bottles over the time to enjoy and contemplate. It's been a treat. The 2018 season was a little warmer than 2017. The nose is floral,

Straight from the cellars from one of Barolo's great years! Although not a Cru in its own right, Rocche Rivera is recognised as a position within the Scarrone Cru of great importance. Rocche Rivera has dizzying slopes to say the least, in the same vein as the adjacent Rocche di Castiglione, and generally shows an extra touch of perfumed elegance.I haven't had the chance to try one of these yet, looking at the only vintage chart I have ever seen worth consideration, by Giuseppe Vajra, 2010 is
