The unique yeast that grows on top of the sherry protecting it from oxidation.

A Spanish sherry style. Fino is made from the grape variety Palomino Fino, it is protected by Flor yeast throughout its life. In what is called biological maturation.

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

Sottimano Barbaresco ‘Basarin’ 2016

Nebbiolo | Piedmont, Barbaresco

Pair this up with the Currá and have a little Neb-Festa! Having two wines side by side from adjacent vineyards is always fun. Inevitably it's a demonstration in just how much varriation there is between vineyards with very short distances between them. They house style is evident. Basarin has a more elegant feel to it over the richer Currá, though it is still has a bit of weight to it. Normally, I am not an advocate of new oak in Barolo or Barbaresco. The Highest Elevation Contrada owned by Passopisciaro making delicious Ethereal wines! Made from Nerello Mascelese, some call it the Barolo of the South, others a cross between Pinot & Nebbiolo. I prefer to say it is itself & delicious. The vineyards of Etna have undergone a major renaissance in the last couple of decades. Passipisciaro has been one of the wineries at the forefront. Very ripe liqueur-like aromas of various black berries are nuanced by plenty of spice and floral elements. There is excellent underlying tension to the beautifully textured medium weight flavors that also brim with sappy dry extract and minerality, all wrapped in a bitter pit fruit finale that offers impressive persistence.
