A Spanish sherry style. Amontillado – Made from Palomino Fino, the balance in of Biological vs Oxidative maturation is dominated by the oxidative side for Amontillado. The name translates to of Montilla, the slightly inland region known best for it’s Pedro Ximénez where the technique for it production of Amontillado originated.

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

Vietti Barolo ‘Ravera’ 2021

Nebbiolo | Piedmont, Barolo

Pretty, red fruit. Beautifully developed. Impeccable élévage. An underlying tar/leather/slate notes layering in intriguing complexity. The Vietti crew have built quite a lot of structure into this Ravera of Novello. A wonderful example of Ravera making for a very complex iteration. Lovely generosity. Fine plush Neb tannin. This is also slightly reduced and it's enough to render the nose difficult to assess. The medium-bodied flavors are both more powerful and concentrated though at the expense of less refinement and minerality on the driving and impressively persistent finish. This will need to add depth to merit the upper end of my predicted range but the underlying material appears to be present so that this can eventually happen. Vajra Barolo ‘Coste di Rose’ 2015

Nebbiolo | Piedmont, Barolo

Coste di Rose is possibly the most approachable cru of Barolo at this stage, with roses and a floral-dominated nose, combined with marasca cherry and hints of licorice and mint. A very elegant and pleasurable structure that flows gracefully on the palate with a lingering and sapid finish. Nomen omen.  Giuseppe Vaira

Olek Bondonio Rosso Guillietta Pelaverga 2021

Pelaverga Piccolo | Barbaresco, Italy

Very pale colour. Olek's hallmark harmony & development, complexity & balance. Together & composed.Stylistically you could argue that it's a light red or bold Rosé. Either way it's delicious.A core of vibrant strawberry fruit & musk with a slatey pop & earthy layer. Charming, energetic with loads of zippy, crunchy acid and fine tannin combining into a pleasantly chalky mouthfeel. Thirst quenching with a very complete feel to it. I shall be seeking more Pelaverga Picc
