A Spanish sherry style. Amontillado – Made from Palomino Fino, the balance in of Biological vs Oxidative maturation is dominated by the oxidative side for Amontillado. The name translates to of Montilla, the slightly inland region known best for it’s Pedro Ximénez where the technique for it production of Amontillado originated.

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

The 2020 Cavallina is a fascinating iteration. Epic tension and minerality see it super tightly wound and taking time to resolve and build generosity. I initially tasted this over a year ago and saw the epic potential waiting for us. 6 months later it was only just starting to settle. It's one to be patient with. As with the 2015, 2017 & 2019 I found myself not really wanting to write tasting notes simply wanting to devour the glass!Sassella typically produces the most elegant wines of the three communes with Inferno next and Grumello the boldest.Sassella has done it again! Perfume and intensity on the nose lovely flowers. Refined and more linear with an additional layer of tannins and textural intrigue. Super fine acid. It’ll be lovely to see this with a couple more years as it will relax

This one of the more floral-suffused wines in the range with its hints of violet, rose petal and lavender that add touch of elegance to the very ripe poached plum scents that presently lack a bit of freshness. There is verve and freshness on the palate of the dense, voluminous and punchy flavors that coat the palate with dry extract that also serves to buffer the firm tannins shaping the powerful, serious and mildly warm finale. This is one of the benchmark traditional Barolo's from a classic years! Every time I’ve tried Cavallotto’s ‘Vigna San Guiseppe’ I’ve gone to a very happed place.
