Alcoholic fermentation has finished and the Bathtub Winemaking Project Shiraz has been pressed and is now resting in either tank or barrel.

Malolactic fermentation has started converting malic acid to the softer lactic acid. We need to start raising the wine, the process of élévage begins.

Malolactic fermentation has started converting malic acid to the softer lactic acid. We need to start raising the wine, the process of élévage begins.

There is no recipe for this. We just need to respond to what the wine is telling us it needs. At this stage it’s just a little bit stinky, with a little hint of hydrogen sulphide. To remove this we’re racking the wine, removing the gross lees, solids that have settled out of the wine, where most of the stink emanates from.
