Oloroso

The unique yeast that grows on top of the sherry protecting it from oxidation.

A Spanish sherry style. Oloroso – Made from Palomino Fino, this wine does not undergo Biological ageing under flor. Although given the endemic nature of flor in the Bodegas it undoubtedly is present in the wine at times. Following fermentation the wine is fortified to 17-18% killing the flor. Oxidative maturation will see the alcohol rise to 20-24% dependant on the period of maturation. Oloroso can be made dry, or a little sweet, by stopping fermentation with an early fortification. Even the dry Oloroso’s can appear sweet due to their richness and alcohol level.

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

Feeling Thirsty?

Domaine Roland Lavantureux Petit Chablis 2020

Chardonnay | France, Burgundy

“Here is the only wine that with 100% stainless-steel for all vinification and elevage. All from Lignorelles. That’s a very friendly nose – slightly round and faintly caramel despite tank elevage – an inviting sweetness. A little touch of green in the flavours but also lots of energy and citrus bitters. Very engaging, tasty wine. Long too.”Bill Nanson

So, now I get what all the fuss is about. First wine I tried from these guys was their Rosato, it's a might tasty beverage. It has the same seamless complexity, spice, chocolate, earth, joy, that makes their Rosato the insanely delicious wine it is. There's stuff going on here. Wendouree Cabernet Sauvignon 2002

Wendouree Cabernet Sauvignon 2002

Cabernet Sauvignon | South Australia, Australia

AP Birks Wendouree Cellars produce some of the very few wines I’ll buy without tasting! The wines are something special. A celebration of an incredible old vineyard with plantings from the late 1800s. Tony & Lita are custodians of something truly special! From 1971 and 2002 plantings. Some argue that his Cabernet and Cabernet Malbec are not varietal in character. This I don't care about. What I'm looking for is wine that is good and these are damn good! Both have an incredible core o
