Oloroso


The unique yeast that grows on top of the sherry protecting it from oxidation.

A Spanish sherry style. Oloroso – Made from Palomino Fino, this wine does not undergo Biological ageing under flor. Although given the endemic nature of flor in the Bodegas it undoubtedly is present in the wine at times. Following fermentation the wine is fortified to 17-18% killing the flor. Oxidative maturation will see the alcohol rise to 20-24% dependant on the period of maturation. Oloroso can be made dry, or a little sweet, by stopping fermentation with an early fortification. Even the dry Oloroso’s can appear sweet due to their richness and alcohol level.

 

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

Fuligni Brunello di Montalcino 2019

Sangiovese | Tuscany, Italy

Dusty and floral, the 2019 Brunello di Montalcino opens with a perfumed blend of dried roses, cherries, mint and lavender candies. It’s elegant and seamlessly silky on the palate, enveloping the senses with ripe red berry fruits contrasted by a bitter clove tinge. A core of brisk acidity maintains a lovely balance as a web of fine tannins saturates the palate, and a pleasantly chewy sensation remains. A unique Soave, this wine along with Il Corincino's Verdicchio 'Gaiospino' was one of the first two wines that sparked my interest in Italian wine. It's a rich, textural interpretation of Soave, with great harmony, hints of spice, lovely phenolics (giving texture) and length. The age of the vineyards is reflected in the depth of fruit. Initially there is a touch of reduction though aggressive swirling slowly reveals overtly floral-suffused nose that is comprised mostly by attractively spicy red and dark berries aromas. There is excellent volume to the rich but appealingly delineated medium-bodied flavors that also exude a subtle minerality on the mildly austere, firm and sneaky long finish.
