Manzanilla

The unique yeast that grows on top of the sherry protecting it from oxidation.

A Spanish sherry style. Manzanilla – Made from Palomino Fino, Manzanilla, is much the same as Fino, under biological maturation. It is produced and matured only from the area around Sanlúcar de Barrameda. The Solera system is often run in a slightly different way. The climate of the area, close by the sea encourages a thicker layer of flor yeasts on the wine, reducing the rate of oxidation & glycerol production (glycerol is an alcohol that gives rounder mouthfeel). The wines tend to be fresher, and finer than their fino counterparts and exhibit a certain saltiness that arguably comes from it’s proximity to salt water.

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

Feeling Thirsty?

"Deeper and more structured than the Griotte, Lignier's 2019 Charmes-Chambertin Grand Cru unwinds in the glass with notes of blackcurrants, cherries, sweet soil tones, wilted rose petals and spices. Medium to full-bodied, rich and layered, it's ample and voluminous, with velvety tannins, succulent acids and a broad, expansive finish."William Kelley, The Wine Advocate

Joh Jos Prüm Wehlener Sonnenuhr Spätlese Riesling 2020

Riesling | Mosel-Saar-Ruwer, Germany

Great intensity and transparency! Power and grace. Excellent acid and flavour profile. Long, tight, brooding. Waiting to explode. Sophistaction and restraint. Layered and complex with a hint of flint. A very good energy and freshness. Line and length. Youthful and estery at the moment. Will require patience. The 2020er Wehlener Sonnenuhr Riesling Spätlese offers a superbly spicy, herbal, and refreshing nose of rosemary, vineyard peach, almond cream, white flowers, mint, and cassis. Vajra Barolo ‘Ravera’ 2020

Nebbiolo | Piedmont, Barolo

The G.D. Vajra 2020 Barolo Ravera reveals wild forest berry, cherry, licorice root and sweet summer fruit. The effect is focused or chiseled thanks to animating acidity and pinpoint fruit flavors. Located in the village of Novello, Ravera benefits from open panoramas and cooler temperatures from the mountains. These factors make this cru one of the most promising in this era of climate change. This is a Barolo for the purists. Monica Larner, The Wine Advocate 96 Points AG 94+

Sadie Family Stellenbosch Mev. Kirsten 2023

Chenin Blanc | South Africa

“The 2023 Mev. Kirsten is perhaps the most closed of the three Chenins, unfolding with time to reveal scents of yellow fruit, oyster shell and a touch of lanolin. The palate has superb weight and density—the most fruit-driven Chenin, with an irresistible, slightly viscous texture counterbalanced by a keen thread of acidity. It’s even a little petrolly on the finish. Fabulous from beginning to end.”Neal Martin, Vinous 96 Points
