Manzanilla

A Spanish sherry style. Manzanilla – Made from Palomino Fino, Manzanilla, is much the same as Fino, under biological maturation. It is produced and matured only from the area around Sanlúcar de Barrameda. The Solera system is often run in a slightly different way. The climate of the area, close by the sea encourages a thicker layer of flor yeasts on the wine, reducing the rate of oxidation & glycerol production (glycerol is an alcohol that gives rounder mouthfeel). The wines tend to be fresher, and finer than their fino counterparts and exhibit a certain saltiness that arguably comes from it’s proximity to salt water.

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

Feeling Thirsty?

Jadot have turned out a divine Estournelles from 2018. Burghound's note of it being an understated style rings true. Many 2018 from Gevrey-Chambertin are bold in nature. Here we see a delicacy that has it showing fine and elegant. Tasted blind you'd possibly look to another village. Deceptive it is, with considerable depth and length. Poise, flow and shape, with a perfume floating over delicious fruit. Jadot again showing a deft hand in crafting a sophisticated Pinot full of personality. April 2

Very complete, excellent vertical linear flow and shape with a generosity, love the weighting and persistance, a little chalky phenolics, and perhaps just a little oak influence. Great development pre bottling with a delicacy in the lees work and a resolved comfort.

Bottled in Magnum only. From the swimming-pool block; this is one of the smallest monopole 1er Cru sites in Burgundy. Following a 5-day pre-fermentation cold maceration the primary ferment then takes place in an open oak vat which lasts for 10 days; gentle pressing; the wine is matured in 50% new barriques for 15 months. A more complex nose features notes of citrus confit, green apple and a floral top note along with just enough wood to notice. There is excellent concentration to the sappy and very rich yet focused medium weight flavors that possess a plush mouthfeel, all wrapped in a chalky, youthfully austere and lightly stony finale where a touch of warmth slowly emerges.
