Manzanilla Pasada

A Spanish sherry style. Manzanilla Pasada – Made from Palomino Fino, Manzinilla Pasada, is an older richer version of Manzanilla, the Flor begins to diminish after 6-7 years as the nutrients to sustain it a consumed, the maximum age a Manzanilla would be bottled at, and, it shifts from a phase of biological aging under flor to an oxidative aging for the remainder of maturation.

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

Luciano Sandrone Barolo ‘Vite Talin’ 2016

There are some perks to the job! Got to try the newest edition to Sandrone's list of Barolo, the Riserva 'Vite Talin'. 30 years in the making and it's quite some wine! Such a special wine. Talenti Brunello di Montalcino 2016

Sangiovese | Tuscany, Italy

This would have to be the single best value Brunello I've tried in the last few years. Well, well, here's something quite delicious. Straight out of the gate this is just beautiful. The harmony and complexity match a plush, fine mouthfeel of divine tannins. Generosity meets restraint in a beautiful place. Layered with red fruits, darker fruits, a little perfume over earthiness, baking spices, woody herbs, and much, much more. This would have to be the single best value Brunello I've tried in

Bone Dry!
Stunning Chenin Blanc to Rival the Drinking Pleasure of 1er Cru White Burg & the Worlds Best Dry Rizza! So fine. Superbly textured. Stunning acid of epic length, piercing long and lovely. Fruit length and depth continue to build epically long after swallowing. Incredibly complex & layered. Such depth. Citrus, lemon, a little white grapefruit, pear & quince, garrigue woody herb. When the acid settles and generosity builds with time in bottle this will be an absolute ripper. Wait 3-5 years.
