The unique yeast that grows on top of the sherry protecting it from oxidation. When aged under flor, a wine is considered to be undergoing biological maturation. The flor yeast consuming oxygen, alcohol, and, volatile acidity, in turn the produce metabolites that add unique characters and textures to the wine. Each Bodega has a unique endemic flor, that as Jesús from Equipo Navazos would say, is one of the two sherry terroirs, the other the vineyard.

 The 2023 Chassagne-Montrachet Les Chenevottes 1er Cru has impressive purity on the nose, with very well-defined scents of lemon, orange pith and apple blossom. The palate has a powerful, weighty opening. This has a lot of concentration, with tropical notes coming through toward the finish, though the previous vintage had a little more tension. Fruit for the Fratelli Alessandria 2021 Barolo del Comune di Verduno comes from five vineyard sites in Verduno: Riva Rocca, Rocche dell'Olmo, Campasso, Pisapola and Boscato. This was the first Barolo del Comune di Verduno to hit the market (with the 2017 vintage). The bouquet focuses on redcurrant and tart cherry, and there is a pinch of cinnamon buried in there as well. Bindi Dixon Pinot Noir 2023

Pinot Noir | Victoria, Australia

The Dixon comes from part of the original 1988 planting of Pinot Noir at Bindi and some of the 2001 Kaye vineyard. As always, it's bottled a little earlier than the other five Bindi Pinot Noirs; at ten months rather than 15. The wine is made with destemmed fruit and wild yeast in open fermenters and matured in small French oak barrels. The 2023 is immediately fragrant with lifted red cherry, raspberry, strawberry and spice. There is a touch of eathiness and some savoury cherry stone fragrance. T
