The unique yeast that grows on top of the sherry protecting it from oxidation. When aged under flor, a wine is considered to be undergoing biological maturation. The flor yeast consuming oxygen, alcohol, and, volatile acidity, in turn the produce metabolites that add unique characters and textures to the wine. Each Bodega has a unique endemic flor, that as Jesús from Equipo Navazos would say, is one of the two sherry terroirs, the other the vineyard.

Not all Petit Chablis is created equal! Moreau’s Petit Chablis comes from a single 2.5-hectare site between Courgis and Beine, just outside Chablis on the route to Auxerre. Well I couldn't find a review of this and haven't had a chance to taste it. Given the other 9 wines from 2016 and 2017 I've tried it's hard to see this being anything but true to form and simply put a 2017 version of the 2016!My Note on the 2016:Opens with juicy crunchy fruit that takes just a little while to settle in.
