Fascinating Pecorini. A little skin contact yields a lick of burnt match that sits nicely as a complexing line over complex fruits with citrus oils. Nicely developed its an example of a textural Pecorino. That will please those after a less funky pecorino than Pepe’s and a much more textural complete it cuts a fine balance between the full blown styles and the fresh precise ones. A lot to love here. Spiced with a lick of lanolin, expressive out of the gate with a flow and shape that indicates a patient long ferment filling out/depth in the mid-palate with a little nutty lees work softening a fine line of juicy acid. La Princée is a blend of 10 small village parcels from across just under three hectares. One-third of these vines are now over 60 years old, and the remainder were planted in 1985 and 2000. All the parcels are in the cooler, east-facing Saint-Aubin combe (valley), on chalky/mineral soils. A murger is a pile of stones or a wall made from rocks extracted from a vineyard’s soil. Showing exactly how important vine age is! A step up, an extra zip of salty acid and that mid palate weight with excellent length. Florals, white stone fruit a little citrus pith and plenty of fun. That slight primary edge that disappeared as it opened revealing excellent depth and length with restraint. A little more complexity. Mid palate texture is excellent. Hazelnuts and an extra layer of pleasure here. Excellent.
