Chardonnay from France, Côte du Beaune, Chassagne-Montrachet, Burgundy
$107
This comes mainly from a well-situated 0.6-hectare parcel of 35-year-old vines planted on a northeast-facing hillside just south of Chassagne. There is also a little Chassagne village fruit in the blend. The fruit is hand-picked, pressed and left to settle. It naturally ferments on lees for 12 months in small stainless-steel vats and older barrels. The wine is then blended and settled for a further six months in tank before bottling. This has always been a lovely drink, but today, the age of vines and Thierry and Chrystelle Pillot’s work in both the vineyard and cellar results in another level altogether. The 2022 is creamy, fleshy and long. A lot of pleasure to be had here.
“Pale in colour, prettily toasty on the nose, alongside the clean white fruit, balanced, with energised apple fruit yet still with some flesh to provide the body.”

“Thierry Pillot is one of the best young white winemakers in Burgundy right now… Buy these wines before Monsieur Pillot becomes the next Burgundian superstar.”
Tim Atkin MW
“Characterful, elegantly textural and mouthwateringly incisive, these are superb white Burgundies, and to my mind, Pillot is one of a handful of exciting producers who win Chassagne-Montrachet the title of Burgundy’s most interesting white wine producing village today. That he stills flies somewhat under the radar—at least relative to the quality to be found here—is perplexing. What’s more, that’s bound to change, and sooner rather than later, so readers shouldn’t hesitate to buy whatever bottles they can find.”
William Kelley, The Wine Advocate
