Winemaking Excellence – Fruit Sorting & Destemming at Yabby Lake with Tom Carson

Watch as Pinot Noir from Yabby Lake’s Block 2 is sorted by hand & some seriously impressive cutting edge machinery!

As the 2017 Vintage continues to ramp up we took the time to visit Yabby Lake to watch as they received Pinot from their Block 2.

Having worked in a lot of wineries you notice the things that make a difference.

The Yabby Lake winery has been set up with a serious commitment to achieving excellence.

The fruit sorting equipment at a cost somewhere in the 6 figure realm, in addition to the time and labour that goes into sorting individual berries, is just one small step of the process.

Sorting & Destemming occurs at the pedestrian rate of around 1 tonne an hour. In a large winery 1 tonne can be processed in a minute!

Removing the 20kg per tonne, or 2%, of shot & raisined berries, in order to retain freshness in the wine and ensure no hard characters are imparted is something few are willing to do.

At this level, it’s all about having conviction in your beliefs, backing it with actions and hopefully having the coin to get the fancy shiny steel or wooden bits as the case may be.
