Ripasso


“Ripasso” means “re-pass”. It refers to the technique when the must of a basic Valpolicella is referemented on the pomace of the “Amarone della Valpolicella” and/or “Recioto della Valpolicella” wines

Ripasso refers to a winemaking technique used for red wine production in Valpolicella. A Valpolicella Ripasso DOC is a medium-bodied wine with good alcohol content. It is obtained by the refermentation of the basic Valpolicella on the pomace of the “Amarone della Valpolicella” and/or “Recioto della Valpolicella” wines (“Ripasso” means “re-pass”). Thanks to this process, the wine is characterized by higher alcohol content, higher values of the phenolic substances and extracts than a basic Valpolicella.

The 2022 Ruchottes-Chambertin Clos des Ruchottes Grand Cru is one of my favorite aromatics from Rousseau, one you instantly fall in love with - real frisson, red berry fruit laced with shucked oyster shell. The palate is very well-balanced, framed by filigree tannins. There is real tension from start to finish, as you expect from this vineyard, finishing with immense precision. Crystal clear with a more savoury flavour profile. As it opens in the glass it comes together beautifully!As is always the case a little bolder richer and more immediate generosity here in the context of Valtellina than the Sassella. A great contrast to the Sassella with a rounder mid-palate. A little more grip offers an energy to that mid-palate fruit that continues to drive through. As always this 100% single-quinta wine is drawn from Noval’s own vines. A unique Soave, this wine along with Il Corincino's Verdicchio 'Gaiospino' was one of the first two wines that sparked my interest in Italian wine. Looking very good. Energetic yet beautifully developed. Layered complex, lovely textural, bit of barrel & lees time. Full luscious. Baking spice. Brooding at the moment. The age of the vineyards is reflected in the depth of fruit. FYI - Vecchie Vigne means 'Old Vines' and these are pre-phylloxera from a sandy sub-plot of the La Foscà vineyard.
