Recioto is the ancestor of the Amarone and the most ancient wine of the Valpolicella Appellation.

Recioto is the ancestor of the Amarone and the most ancient wine of the Valpolicella Appellation. It is produced, like Amarone, through the grapes drying in the so-called “fruttaio”. Once the grapes have lost at least half of their weight, and with the evaporation of the water, the desired concentration of sugars is achieved, so that the vinification can take place. The fermentation is stopped to preserve this wine’s typical structure and sweetness. So, it is the only sweet wine produced in Valpolicella, but thanks to its good acidity it’s never cloying.

Dave has a deft touch making sophisticated wine with fine bone and a delicious core of fruit. He's quickly established respect in the region through is work making the wine at Cerretto and his efforts establishing his own venture. Guardiola higher elevation puts it on the more elegant side of the scales! Made from Nerello Mascelese, some call it the Barolo of the South, others a cross between Pinot & Nebbiolo. I prefer to say it is itself & delicious. The vineyards of Etna have undergone a major renaissance in the last couple of decades. Passipisciaro has been one of the wineries at the forefront.
