The term oxidative, describes winemaking techniques/handling that exposes the wine to oxygen to help develop it and build complexity.

This is the opposite of reductive, describes winemaking techniques that protect juice and maturing wine from exposure to oxygen, typically in order to maintain freshness and fruit characters.

At different stages in the winemaking process, the maker can choose to handle the wine either reductively or oxidatively to guide the wine towards the desired style. For example, the maker may handle the unfermented juice oxidatively and the maturing wine reductively pre-bottling.

Oxidative and reductive handling can dramatically impact the aromas, flavours, and, texture of the wine.

Like pretty much all winemaking there is a broad spectrum of approaches from super reductive to highly oxidative.

Head to the Wine Bites Mag Article “Wine Decoded Tasting Revolution: Bite 3 – Freshness & Development” for a deep dive into stages of the winemaking process and how oxygen may be used.

Wines of the world that are exposed to the greatest amount of oxygen include sherries (both under a flor and direct exposure), fortifieds like Madeira.

The risks of handling wine oxidatively include the development of volatile acidity, and, the oxidation of the wine destroying the fruit characters, oxidizing the alcohol (ethanol), converting it to aldehyde which can dominate the wine and give it a hard finish.

Just remember, a wine that looks like it has been oxidatively made should still have a good core of fruit and a balanced level of freshness. Exposure to oxygen will have been deliberate and done with care.

An oxidized wine pushes exposure past the limit that the wine can handle. Oxidized wine will be flat, tired, lack freshness and a core of fruit, and may, be volatile, browner in colour and have a hard finish due to the presence of aldehyde.

Praeter Langhe Nebbiolo 2018

Nebbiolo | Piedmont, Barolo

La Morra Fruit from the Vineyards of Luigi Oddero! Declassified Barolo! Not for quality, but, for the shorter ageing timeframe. BOOM! We're seeing more and more whole bunch wine coming out of Barolo. Matt whole bunch skills with Pinot made for a confident hand playing with fruit from La Morra. End results are a beautiful wine, it's really quite delicate for a La Morra. The whole bunch has elicited a fine perfume over vibrant fruit, little hints of spice. The tannins have a little edge of grip, i

Moderate wood surrounds the ripe vaguely liqueur-like aromas of various dark berries, spice, violet and lavender. The vibrant and beautifully textured middleweight flavors, indeed it's almost silky thanks to the fine-grained tannins supporting the lingering finish that firms up noticeably. This is an excellent Gevrey villages with good aging potential. Drink 2030+Allen Meadows, Burghound 89-92 Points As readers may remember, the 2022 Gevrey-Chambertin 1859 derives from old vines in
The 2019 Barolo Mosconi is the most potent of the three Barolos in the range. It exudes Monforte darkness and virile intensity from the very first taste. Black cherry, plum, mocha, sage, tar, lavender and spice infuse the 2019 with tons of character. This is one of the most elegant wines I have ever tasted from Mosconi, a site that does not naturally lend itself to finesse.Antonio Galloni, Vinous 98 Points

The nose is refined, persistent and offering ethereal aromas of peach and mandarin, supported by an enjoyable oak presence. The palate is fresh and the definition of terroir becomes clearer as the tasting progresses. Rich flavours linked to aromas from Chardonnay, then you move to bitter skins associated with the bitterness from new barrels which render the wine very salivating. This length extends the quality of the fruit and the expression of terroir, together with almost marly notes, refre
