Methoxypyrazines are flavour and aroma compounds present in both Cabernet Sauvignon and Sauvignon Blanc responsible for the herbaceous, vegetal, grassy, capsicum aroma.

Methoxypyrazines are flavour and aroma compounds present in both Cabernet Sauvignon and Sauvignon Blanc responsible for the herbaceous, vegetal, grassy, capsicum aroma.  The concentration of these flavours and aromas is reduced through exposure of the fruit to heat and sun. The riper and more exposed the fruit is the lower the concentration of methoxypyrazines.

Feeling Thirsty?

A unique Soave, this wine along with Il Corincino's Verdicchio 'Gaiospino' was one of the first two wines that sparked my interest in Italian wine. Looking very good. Energetic yet beautifully developed. Layered complex, lovely textural, bit of barrel & lees time. Full luscious. Baking spice. Brooding at the moment. The age of the vineyards is reflected in the depth of fruit. FYI - Vecchie Vigne means 'Old Vines' and these are pre-phylloxera from a sandy sub-plot of the La Foscà vineyard.

Sottimano Barbaresco ‘Currá’ 2016

My cup overfloweth! Barbaresco kicking it up a gear! My first taste of a Sottimano. WOW! This is stunning. Such a complete wine. It has everything and all the right places. A density and richness of dark fruit. Long, lingering and delicious. The richness is perfectly tempered by exceptional tannins of depth. This has been expertly macerated, the time on skins during ferment and just following the completion of the alcoholic fermentation is apparently around 40 days. That time has woven, truffles

Giovanni Rosso Barolo ‘Serra’ 2017
