A Spanish sherry style. Manzanilla Pasada – Made from Palomino Fino, Manzinilla Pasada, is an older richer version of Manzanilla, the Flor begins to diminish after 6-7 years as the nutrients to sustain it a consumed, the maximum age a Manzanilla would be bottled at, and, it shifts from a phase of biological aging under flor to an oxidative aging for the remainder of maturation.

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

This gorgeous old-vine Chassagne rouge hails from a single 0.94-hectare parcel of 50-plus-year-old Pinot Noir vines grown on the red clays of Les Grandes Terres on the Santenay side of Chassagne. The clay-rich soil has long produced some of the finest and silkiest reds of the village. The 2022 fermented with 50% bunches, bringing perfume and extra-fine tannins. Clemens Busch Riesling Marienburg 1er Grosses-Gewächs 'Fahrlay' 2023

The Marienburg GG Fahrlay 2023, as it is referred to on the central part of the label, was fermented spontaneously in traditional oak casks from fruit harvested in a blue slate part of the Marienburg vineyard. Keller Riesling ‘RR’ 2023

Riesling | Rheinhessen, Germany

RR refers to Riesling from red soils – a half-hectare parcel within Kirchspiel that gives fruit that is a little more spicy than fruit that goes into Von der Fels. This parcel doesn't always ferment to complete dryness, as was the case in 2022, where it has also been blended with some top parcels from Abtserde and Morstein (usually destined for the GGs) that also didn't ferment totally dry.
