The unique yeast that grows on top of the sherry protecting it from oxidation. When aged under flor, a wine is considered to be undergoing biological maturation. The flor yeast consuming oxygen, alcohol, and, volatile acidity, in turn the produce metabolites that add unique characters and textures to the wine. Each Bodega has a unique endemic flor, that as Jesús from Equipo Navazos would say, is one of the two sherry terroirs, the other the vineyard.

AP: 03 21. The 2020er Graacher Domprobst Riesling Kabinett was fermented down to fruity-styled levels of residual sugar. It offers an incredibly subtle feel of pear, cassis, bergamot, white flowers, vineyard peach, wet stone, and fine subtle smoky elements. A more complex nose features notes of citrus confit, green apple and a floral top note along with just enough wood to notice. There is excellent concentration to the sappy and very rich yet focused medium weight flavors that possess a plush mouthfeel, all wrapped in a chalky, youthfully austere and lightly stony finale where a touch of warmth slowly emerges. Ridiculous Yields!
Of the two Bellevue Cuvées, the Cailloux has better balance and energy with a touch less alcohol and a touch more acid. Excellent darker, earthier profile than the Chiroubles. Beautifully weighted, plump fruit with a spice layer and just a little playful stalk tannin grip keeping the palate lively and, with that fine line of acid, refreshing. Any excellent rendition and like the other 2023's more immediate approachability than previous vintages. I typically find Bouland's wines need at least 18
