The unique yeast that grows on top of the sherry protecting it from oxidation. When aged under flor, a wine is considered to be undergoing biological maturation. The flor yeast consuming oxygen, alcohol, and, volatile acidity, in turn the produce metabolites that add unique characters and textures to the wine. Each Bodega has a unique endemic flor, that as Jesús from Equipo Navazos would say, is one of the two sherry terroirs, the other the vineyard.

Along with the 2015, I devoured a brace of 2016's from across the appellations. Philipponnat Royale Reserve HALF NV

Disgorged in June 2020 with eight grams per liter dosage, the latest release of Philipponnat's NV Brut Royale Réserve is based on the 2016 vintage, with 27% reserve wines. Offering up aromas of peach, pear and plum mingled with apple blossom and sweet pastry, it's medium to full-bodied, fleshy and expressive, with a pillowy mousse and a generous core of fruit, underpinned by bright acids.William Kelly

Pretty, red fruit. Beautifully developed. Impeccable élévage. An underlying tar/leather/slate notes layering in intriguing complexity. The Vietti crew have built quite a lot of structure into this Ravera of Novello. A wonderful example of Ravera making for a very complex iteration. Lovely generosity. Fine plush Neb tannin.
