Délestage


Délestage is a French winemaking term, known as “Rack and Return” in English. It refers to the process during fermentation of a red wine, where all of the liquid in a fermenting red wine is drained from the skins, seeds and stalks into another tank or vessel and then returning it back to the original fermenter often by pumping it over the top of the skins.

It refers to the process during fermentation of a red wine, where all of the liquid in a fermenting red wine is drained from the skins, seeds and stalks into another tank or vessel and then returning it back to the original fermenter often by pumping it over the top of the skins. It is done to introduce oxygen, moderate temperature, and, encourage the extraction of colour, flavour and tannin from the skins, seeds and stalks.

The Chassagne comprises six parcels Benoît inherited from Domaine Bernard Moreau. The most northerly of these sites is En Journoblot, which borders Criots-Bâtard. A slightly riper nose combines notes of just sliced pear and apple along with background nuances of floral and zest trimmed in mildly more wood influence. The rich, delicious and beautifully textured medium-bodied flavors possess just a bit better depth and persistence on the firmer finale. The Wehlener Auslese had everything. The 2022er Wehlener Sonnenuhr Riesling Auslese has a beautifully engaging and captivating nose of fresh herbs, white mint, bergamot, yellow flowers, pineapple, candied grapefruit, smoke, and juniper. The 2020 Fogar Do Castriño feels more civilized, matured in a used chestnut barrel, and the notes from the wood feel subtler than in the 2019 when they had to use a new barrel. After the good experience with A Graña, they went for a chestnut barrel that they feel marks less than the oak and respects more the character of the Albariño grape.
