Kicking off with the secret sauce, not really, but something pretty tasty. The condensation that forms insides fermenters has a superb taste, kinda like a mild spirit.

We do what we can to save as much of it as possible and get it back into the ferment!

Today, we’re racking and returning the big bathtub, draining all the fermenting wine off, then aerating it to help get rid of Hydrogen Sulphide, and, help the yeast get stronger.
