Délestage


Délestage is a French winemaking term, known as “Rack and Return” in English. It refers to the process during fermentation of a red wine, where all of the liquid in a fermenting red wine is drained from the skins, seeds and stalks into another tank or vessel and then returning it back to the original fermenter often by pumping it over the top of the skins.

Délestage is a French winemaking term, known as “Rack and Return” in English. It refers to the process during fermentation of a red wine, where all of the liquid in a fermenting red wine is drained from the skins, seeds and stalks into another tank or vessel and then returning it back to the original fermenter often by pumping it over the top of the skins. It is done to introduce oxygen, moderate temperature, and, encourage the extraction of colour, flavour and tannin from the skins, seeds and stalks.

From Les Casse-Têtes and Meursault Les Murgers de Monthelie. “This is aromatically similar to the Clousots but with more floral elements. There is even better volume and mid-palate density to the muscular medium weight flavors that coat the mouth with dry extract on the overtly powerful finish where a hint of bitter lemon arises. Auguste Clape Cornas ‘Renaissance’ 2020

Shiraz/Syrah | Rhône Valley, Cornas

I tasted two components that will make up the bulk of the 2020 Cornas Renaissance, both still in foudre. From Patou and 15- to 20-year-old vines, a medium to full-bodied sample featuring mentholated red plum notes, chewy tannins and mouthwatering acids (90 - 92). From Reynard and 30-year-old vines, a medium to full-bodied sample that showed more cassis fruit, silky tannins and great freshness (93 - 95).
