Methoxypyrazines are flavour and aroma compounds present in both Cabernet Sauvignon and Sauvignon Blanc responsible for the herbaceous, vegetal, grassy, capsicum aroma.

Methoxypyrazines are flavour and aroma compounds present in both Cabernet Sauvignon and Sauvignon Blanc responsible for the herbaceous, vegetal, grassy, capsicum aroma.  The concentration of these flavours and aromas is reduced through exposure of the fruit to heat and sun. The riper and more exposed the fruit is the lower the concentration of methoxypyrazines.

The 2010 Perno Riserva and 2008 Gabutti Riserva where the first 2 Sordo Barolos I drank. They lit a fire and I see everything in the 2019 that excited me about the 2010.

The 2016 Barbaresco Montefico Vecchie Viti is a big, statuesque wine. Of all the 2016 Barbarescos, the Montefico seems to be the wine that is still recovering most from its bottling, about two months before this tasting.
