Tartrate in it’s pure form is also known as Cream of Tartar. It is used in baking, and, is an ingredient in baking powder. You guessed it, they source the tartrate from the wine industry!

Both Tartaric Acid and Potassium are naturally present in grapes. The solubility of Tartaric Acid and Potassium is dependant on temperature, alcohol concentration, pH and a number of other factors.

Commercial wines are typically made cold stable by chilling the wine down to close to 0ºC encourage tartrate crystallisation, the crystals are then removed by filtering or natural sedimentation followed by racking the wine. There are a number of other methods to achieve this result.

It’s common to see Tartrate in wines that have high acidity, Sauternes, German & Alsatian Riesling, Nebbiolo and many others.

Below is a picture of tartrate from the bottom of the tank when we racked the 2017 Shiraz after it’s second winter cooling in 2018. You can see it’s picked up a bit of colour too.

The Chemistry

Francesco Versio Dolcetto di Dogliani 2021
Superb! Bravi Francesco!🍷
The 'Side Project' of ex-Bruno Giacosa's winemaker Francesco Versio this is a stunner! Given Francesco used to make wine at Bruno Giacosa it is hardly surprising that he knocks out a solid Dolcetto. Giacosa being known as arguably the best maker of the variety. Co-incidentally the last Dolcetto I had, a few days before this, was a Bruno Giacosa made by Francesco, and, it was one of the best Dolcetto I've had the pleasure of devouring. The Dogliani DOCG covers some broad territory. Nebbiolo | Piedmont, Barolo

From the Perfume of Barbaresco, the Barolo shifts to a savoury, earthy profile, the richness of La Morra fruit shining through! 80% La Morra. Immediate generosity has it open for action but so much more. A little chocolate and little coffee, savoury bits on dark fruit. There is a lot going on here with layers of flavours and tannins. The depth and length are impressive. Wonderful harmony and presence.Full, dense and obviously really bright. Rose, maraschino, fleshy red plum/red prune. More

Praeter Langhe Nebbiolo 2018

Nebbiolo | Piedmont, Barolo

La Morra Fruit from the Vineyards of Luigi Oddero! Declassified Barolo! Not for quality, but, for the shorter ageing timeframe. BOOM! We're seeing more and more whole bunch wine coming out of Barolo. Matt whole bunch skills with Pinot made for a confident hand playing with fruit from La Morra. End results are a beautiful wine, it's really quite delicate for a La Morra. The whole bunch has elicited a fine perfume over vibrant fruit, little hints of spice. The tannins have a little edge of grip, i

Very deep color. The is more new oak here to be seen of first impressions that elevate the overall complexity and class of the aromas, it is amply carried by the depth of fruit, wild strawberry, black cherry, blackberry and plum with a brooding background. The palate is suitably concentrated with ample extract and structure that has layers of fruit and texture. Very classy effort. The finish long and fragrant. Drink 2025-2038Tom Carson
