The unique yeast that grows on top of the sherry protecting it from oxidation. When aged under flor, a wine is considered to be undergoing biological maturation. The flor yeast consuming oxygen, alcohol, and, volatile acidity, in turn the produce metabolites that add unique characters and textures to the wine. Each Bodega has a unique endemic flor, that as Jesús from Equipo Navazos would say, is one of the two sherry terroirs, the other the vineyard.

Giovanni Sordo Barolo ‘Parussi’ 2021

Nebbiolo | Piedmont, Barolo

Dark horse. Brooding, it looks a little mean at the moment. It will definitely fall into line and become a generous and juicy wine. A gravity and immediate presence to it. A load of complexity here a little coffee and tea and bit more Serralunga. Long firm tannins. ID 92+ Points**Arriving in multiple tranches beginning September + beginning of October 2025**

A combination of three parcels throughout the famous Sanford & Benedict vineyard. Two of the plantings are 10-12 years old, but certainly responsible for the dark, deep core of this wine. The third piece, a small fermentation of the original, own-rooted plantings from 1971, brings the elegance and floral lift.Antonio Galloni, Vinous 94 Points
