The unique yeast that grows on top of the sherry protecting it from oxidation. When aged under flor, a wine is considered to be undergoing biological maturation. The flor yeast consuming oxygen, alcohol, and, volatile acidity, in turn the produce metabolites that add unique characters and textures to the wine. Each Bodega has a unique endemic flor, that as Jesús from Equipo Navazos would say, is one of the two sherry terroirs, the other the vineyard.

Vajra Barolo ‘Coste di Rose’ 2015

Nebbiolo | Barolo (sub-region), Italy

Coste di Rose is possibly the most approachable cru of Barolo at this stage, with roses and a floral-dominated nose, combined with marasca cherry and hints of licorice and mint. Delicious spiced, pear, perfumed with flowers, almost flinty, lovely phenolics, textural and fine, long and even, gentle, flowing, resolved. Savoury. Subtle layered intrigue. Fine acid profile. Bloody fun wine. The last time I had a Chasselas it was from an old planting in Victoria the origin of which I can’t remember. I ended up buying cases of it as a cleanskin for personal consumption. Domaine Hubert Lamy Bourgogne Les Chataigners 2021

Chardonnay | Saint-Aubin, Burgundy

Lamy farms four small parcels on the white limestone soils of Les Chataigners. Tucked up at the far end of the village, this sheltered site is Lamy’s highest and coolest vineyard, with vines planted in 1990 and 2008.
