The unique yeast that grows on top of the sherry protecting it from oxidation. When aged under flor, a wine is considered to be undergoing biological maturation. The flor yeast consuming oxygen, alcohol, and, volatile acidity, in turn the produce metabolites that add unique characters and textures to the wine. Each Bodega has a unique endemic flor, that as Jesús from Equipo Navazos would say, is one of the two sherry terroirs, the other the vineyard.

A markedly more restrained nose grudgingly reveals its array of green apple, lemon rind, wet stone and a variety of spice wisps. There is outstanding size, weight and power to the intensely stony big-bodied flavors that conclude in a compact, tightly wound, very dry and youthfully austere finale. This possesses excellent development potential that should allow it to repay at least a decade of keeping. With that said, it's not so backward that it couldn't be approached after 5 or so years. 2030+

The 2017 Barbaresco Riserva Muncagota plays some of its best cards in terms of texture, offering silky tannins, firmness and a long-lasting veil of fruit flavors. Cassis, wild cherry, camphor ash, spice and iron ore are aromatic protagonists. This wine is lean and compact but very linear and focused.
