The unique yeast that grows on top of the sherry protecting it from oxidation. When aged under flor, a wine is considered to be undergoing biological maturation. The flor yeast consuming oxygen, alcohol, and, volatile acidity, in turn the produce metabolites that add unique characters and textures to the wine. Each Bodega has a unique endemic flor, that as Jesús from Equipo Navazos would say, is one of the two sherry terroirs, the other the vineyard.

Giovanni Sordo Barolo ‘Perno’ 2013

Nebbiolo | Piedmont, Barolo

Bigger than most other wines, with more grunt in all respects. Complex. Chewy and very full palate with a wall of tannins. Meaty flavours with some ironstone. Old-school. Peter Godden, Neb Guru This is all Monforte, with giveaway blue fruits, violet, cherry liqueur and some mint. Firm, taut and fleshy, this is typical of this part of Perno, the Cerretta parcel, immediately adjoining Conterno-Fantino’s, with which it shares a similar darker ‘blue’ style. Moderately generous wood frames the intensely floral and fresh aromas of dark berries, violet, plum and earth. The rich and strikingly vibrant middle weight flavors exhibit evident muscle and minerality along with very good power on the lingering and very firm finish that is shaped by grippy and somewhat coarse tannins. My sense is that this may become less overtly rustic as the tannins resolve though with that said this is unlikely to ever be particularly refined. Burghound

One of the bigger productions (with 17,744 bottles) in the Produttori del Barbaresco's portfolio is the 2017 Barbaresco Riserva Ovello. All of the Riservas in this vintage are characterized by especially exuberant and bold aromas, and this bottle is a prime example. Cassis, wild cherry, tobacco, rusty nail and licorice build intensity.
