Fino


The unique yeast that grows on top of the sherry protecting it from oxidation.

A Spanish sherry style. Fino is made from the grape variety Palomino Fino, it is protected by Flor yeast throughout its life. In what is called biological maturation.

The list of sherry styles below is not exhaustive. It is ordered from freshest and least alcoholic to most developed and alcoholic. The continuum of sub-styles under each is considerable. Variables being, average age, the strength of flor, and, level of oxidation (sometimes determined by the fill height of casks. These limits of each of these factors stretch as you shift from the freshest to most developed styles. A Fino won’t be seen past 6-7 years of age, an Olorosso my stretch to 90 years average age.

Feeling Thirsty?

The 2015 Barbaresco Riserva Rabajà hits the palate with a blast of dark cherry, plum, chocolate, new leather, licorice, smoke and spice. Somber and imposing, the Rabajà shows plenty of its typical breadth and body, but, not surprisingly, it is also closed and in need of time. A broad-ranging nose features notes of violet, lavender, tea, dark cherry and plenty of earth and game nuances. The sleek but notably more powerful big-bodied flavors possess excellent concentration in the context of what is typical for the 2017 vintage, all wrapped in a stony, muscular and solidly persistent finish. The 2017 Barolo Mosconi is a powerful, brooding wine. Black cherry, gravel, dried herbs, scorched earth, spice and leather add to an impression of gravitas. This is an especially somber, potent Barolo that needs time to soften. Even so, it will always be a brute. The substantial finish is a thing of beauty.
