Bâtonnage

Bâtonage is the process of stirring barrels, or any other vessel holding wine to re-suspend lees, consisting mostly of dead yeast. Stirring the lees impacts the texture, aroma and flavour. In addition, the process introduces oxygen as the vessel must be unsealed to insert the stirrer.

Bâtonnage is the process of stirring barrels, or any other vessel holding wine to re-suspend lees, consisting mostly of dead yeast. Stirring the lees impacts the texture, aroma and flavour. In addition, the process introduces oxygen as the vessel must be unsealed to insert the stirrer. It’s an important part of the élévage of the wine. Typically stirring will be more frequent in the early phase of ageing. Frequency will be determined by experience and tasting the wine. There is little point in stirring the wine more frequently than weekly as the lees takes a week to settle and the impact of the introduction of oxygen could be too severe.

Feeling Thirsty?

Looking good! Fresh, style with a nice phenolic grip and cleansing astringency with crunchy mineral acid. Spiced pear and quince with citrus rind and fresh marmalade are balanced by silvery almond lining. Building generosity in the glass. Give this a year in bottle to settle a little and drink over 5 years.

Well played my friends, well played! The 3rd 100% Verduno Barolo from Fratelli Alessandria and it’s a beauty. Take the Prinsiot, already excellent, add another couple of layers of development, greater depth of tannin & you’re through the first couple of chapters of this book. An entrancing perfume ... the roses, baking spices, savoury lines, over a foundation of fruit. Tannins flow long & fine, beautifully weighted against the complex, layered flavour profile & energising gracefu

Wagner-Stempel Riesling Porphyr 2017

Riesling | Siefersheim, Germany

Beautifully balanced, it rests toward the acid side of the scales, with a touch less alcohol, taming rich luscious fruits. We often get seduced by opulence. Daniel's 2015's from sites yielding some of the ripest fullest fruit in the Rheinhessen certainly have such seduction. The 2016 Porphyr, beautifully balanced, it rests toward the acid side of the scales, with a touch less alcohol, taming rich luscious fruits. Such a sophisticated wine of great line and length.
