Délestage

Délestage is a French winemaking term, known as “Rack and Return” in English. It refers to the process during fermentation of a red wine, where all of the liquid in a fermenting red wine is drained from the skins, seeds and stalks into another tank or vessel and then returning it back to the original fermenter often by pumping it over the top of the skins.

It is done to introduce oxygen, moderate temperature, and, encourage the extraction of colour, flavour and tannin from the skins, seeds and stalks.

You can watch it happening during the making of our 2017 Wine Decoded Shiraz, in the Wine Bites Article below. The importance of oxygen introduction for yeast health and the development of red wines during fermentation is also discussed in the video.

Domaine SC Guillard Gevrey-Chambertin 1er Cru Les Corbeaux 2017

Pinot Noir | Gevrey-Chambertin, Côte-de-Nuits

‘Les Corbeaux’ is bordered one side by the Grand Cru Mazis Chambertin! Takes me to a very happy place! This is excellent, When you shift from the Bourgogne to the Village wines there's an jump in fruit length and depth, the tannins length and become silkier. Hit the Corbeaux and additional layers get added to the fruit and tannins, the refinement of both is obvious the concentration and length of fruit jumps to a level exceeding the bump in price. This is exception Gevrey. Sings now, will be

The 2017 Marienburg Riesling Fahrlay Terrassen opens with a bright, very clear, fresh and stony bouquet of concentrated white fruits and lemon notes intertwined with crushed slate aromas. On the palate, this is a highly finessed and elegant Riesling from vines that are 100+ years old. This 2017 serves intensity, power and complexity in a subtle way. The wine has a subtle tannin grip that makes this like a white Pinot Noir. Salty and crunchy and highly finessed, this is a powerful but elegant and

Domaine Racine Santa Rita Hills ‘Wenzlau’ Chardonnay 2019

Chardonnay | Santa Rita Hills, America

The 2019 Chardonnay Wenzlau Family Vineyard is a compelling wine from this site. The pedigree is evident from the first taste. Orchard fruit, mint, white pepper and beams of salinity play off a distinctly phenolic feel. The Wenzlau is a rare Chardonnay of substance and power that very much captures the essence of site. The Fabrice Session 🎧 & 🎥 Inside!

R.Pouillon ‘Les Terres Froides’ Premier Cru MAGNUM NV

Chardonnay | Montagne de Reims, Tauxières

Often in the 'Pro' wine circles, you're asked to nail your banner to a mast in a blind tasting. Although a Chardonnay, Fabrice has fooled, without malice, many a Champenois, who has called this wine a Pinot. It's not so much the flavours, but, the body, richness, and, mid-palate power that this wine offers that can confuse. In the end, all of this is irrelevant. What you have in front of you is a wine of purity, line, length, excellent acid, with lovely ripe flavours, a little pith and grapef
