Reduction

Reduction in wine occurs when yeast become stressed during fermentation through lack of nutrients, oxygen and particularly poor cell wall integrity. The yeast produce hyrdrogen sulphide, H2S or rotten egg gas as a result.

Reduction in wine occurs when yeast become stressed during fermentation through lack of nutrients and oxygen. This results in poor cell wall integrity. Yeast require oxygen to produce the fatty acids and lipids necessary to build the cell walls. As they multiply by budding the fatty acids and lipids are diluted and the cell walls can no longer hold the acid wine out. The pH neutral insides of the cell becomes stressed by the acid that floods in through the leaky cell walls and the yeast produce hyrdrogen sulphide or rotten egg gas in response. Aerating the wine can help fix this. If a wine is still reduced after alcoholic fermentation has finished, small amounts of copper sulphate can be added to remove it. The compound formed falls out of solution and is removed with solids by racking or filtering the wine. If hydrogen sulphide is not removed it can be further reduced into more advanced sulphides called mercaptans that smells like garlic, onion and even burnt rubber. These compound are added to natural gas so we can smell it!

Winemakers can act both to prevent and cure this issue by aerating fermenting wines, ensuring the juice or must has sufficient nutrient to ferment to completion and building strong yeast cultures to inoculated with, if necessary.

Apart from the various aroma, reduction can give the wine a hard angular finish.

Some strains of yeast and grape varieties are more likely to produce sulphides than others.

Note sulphides and sulphur are completely different chemical.

Huet Vouvray Sec ‘Le Mont’ 2022

Chenin Blanc | Vouvray, D'Anjou-Saumur

Big step up from the Haut Lieu & Clos de Bourg this year. Sophistication line and length more tension helping give a sense of purity. The typical Vouvray soft flow with a riper fruit flavour profile compared with a Savennières. Pear, candied ginger yellow stone fruit. Refined, long, beautifully weighted, flowing & delicious. Generosity with restraint. A little white flowers dancing over the top. Will make a great comparison with the 2021. The 2022 Le Mont Sec is a parcel of Cheni

White Cap - Dry "The lime-green-golden 2019 Bernkasteler Lay Auslese ** (White Capsule) is deep, intense and concentrated yet elegant and still precise and flinty on the nose. The attack on the palate is stunningly young and vital before the elegant and crystalline wine reveals its complexity and inner power. This is a tightly structured, very digestible and still edgy Auslese that needs another 5-6 years or so to settle and shine. This 2019 is enormously salty on the finish and highly promising

This is very, very good. Incredible length and depth. Core of vibrant, fresh fruit. Excellent texture with stalk spice and an edge of grip in a good way. Has parallels with Villard's Côte-Rôtie. Insane perfume, such elegance and finesse. Simply delicious. “The 2021 Syrah Sonoma Hillsides is towering and statuesque in bearing from the very first taste. I don’t think I have ever tasted a Sonoma Hillsides with this much finesse, this much purity. A wine of vertical energy, the Sonoma H

Produttori del Barbaresco Riserva ‘Pora’ 2016

Nebbiolo | Piedmont, Barbaresco

The 2016 Barbaresco Riserva Pora is a brooding wine, its mid-weight structure notwithstanding. Iron, smoke, tobacco, cedar and dried flowers add a feral, earthy quality that is so appealing. Pora is often one of the more approachable Riservas in this range, but the 2016 is an exception. Readers should be prepared to cellar it for at least a few years. Galloni
