Referring to the sugar content in a finished wine. A dry wine by definition has no fermentable sugar left. The winemaking definition of dry is less than 2g/L of residual sugar. Known as Trocken in Germany or Sec in France. It should be noted that wines labelled with the German synonym trocken often still have a few grams of residual sugar left in them to balance the higher acidity of the wines.

Auguste Clape Cornas ‘Renaissance’ 2020

Shiraz/Syrah | Rhône Valley, Cornas

I tasted two components that will make up the bulk of the 2020 Cornas Renaissance, both still in foudre. From Patou and 15- to 20-year-old vines, a medium to full-bodied sample featuring mentholated red plum notes, chewy tannins and mouthwatering acids (90 - 92). From Reynard and 30-year-old vines, a medium to full-bodied sample that showed more cassis fruit, silky tannins and great freshness (93 - 95). Domaine Bouchard Pere et Fils Grand Cru ‘Echezeaux’ 2019

Pinot Noir | Vosne-Romanée, Burgundy

This was one of the few wines in the line-up to display any appreciable reduction and in this case it's enough to mask the underlying fruit. The suave, round and highly seductive medium-bodied flavors possess a caressing texture yet there is good underlying power to the acceptably long and complex finale. I had the pleasure of devouring the 2016 about 18 months ago over an aged scotch fillet with a friend. A wine of presence and importance. Along with the other Priorats I've had from Àlvaro it's clear he's got it right in both the vineyard and the winery. After all, to make a wine like the legendary L'Ermita you need mad skills! Even just after landing in the country when wines are a little out of sorts from shipping across the world, the perfume builds in the glass with all the trademark
